Hearty rice, beans and meat from the traveling gaucho
This category highlights the “on the road” food of drovers and wagoners who crossed Rio Grande do Sul with cattle and goods. The emblematic dish is arroz carreteiro (“wagoner’s rice”), a cast-iron-pot meal of rice, dried or leftover barbecue beef, onions, garlic and herbs, developed by carreteiros who needed something filling, portable and easy to reheat over a fire.
