🌭 500g Pork Sausage (Linguiça de Porco) casing removed
🍚 1.5 cups White Rice
🧄 3 cloves Garlic minced
🌰 1 large Onion diced
🍅 2 Tomatoes diced
🌿 Fresh Basil Leaves
🥃 50ml Cachaça
🧂 Salt
🌶️ Ground Black Pepper
💧 Water
🫒 Olive Oil
🥬 Fresh Arugula Leaves
🌿 Fresh Chives chopped
Instructions
1- Preparation:
- Mince the garlic and dice the onion.
- Heat olive oil in a cast iron pot over medium heat.
- Add garlic and onion, sautée until softened.
2- Tomato & Basil Addition:
- Dice the tomatoes.
- Add tomatoes and fresh basil leaves to the pot.
- Stir with the sautéed garlic and onion.
3- Cachaça Infusion:
- Pour 50ml of cachaça into the pot.
- Season with salt and ground black pepper.
- Allow to cook for about 5 minutes until the alcohol evaporates.
4- Sausage Integration:
- Remove the casing from the pork sausage and slice it into rounds.
- Add to the pot.
5- Rice & Water Addition:
- Pour in enough water to cover the ingredients.
- Bring it to a boil, then add the rice.
- Stir gently.
6- Simmer & Cook:
- Cover the pot with a lid.
- Let simmer until the rice is cooked and the liquid is absorbed, about 15-20 minutes.
7- Rest & Serve:
- Remove from heat, let it rest briefly before serving.
- Garnish the dish with chopped chives and accompany with fresh arugula leaves.
