Ingredients
🐟 10 Flying Fish deboned, soaked in lime juice and salt
🥔 1/2 English Potato chopped into cubes, soaked in water
🧅 1/2 Onion partially chopped into cubes, partially sliced into rings
🌶️ 1/2 Sweet Pepper sliced
🧄 3 cloves Garlic chopped
🌿 5 tablespoons Bajan Seasoning homemade
🍛 1/2 teaspoon Curry
🌶️ 1/2 teaspoon Paprika
🧂 1/2 teaspoon Salt
🍃 1/2 teaspoon All-Purpose Seasoning
⚪ 1/2 teaspoon White Pepper
🌿 1/2 teaspoon Basil
🌿 1/2 teaspoon Oregano
🍅 4 tablespoons Ketchup
🛢️ 2-3 tablespoons Cooking Oil
🍅 1/2 Tomato sliced
💧 1 cup Water for simmering
Instructions
1- Prepare the Fish:
- Rinse the fish after soaking in lime juice and salt.
- Spread approximately 5 tablespoons of Bajan seasoning evenly on each deboned fish fillet.
2- Shape the Fish:
- Option 1 (Folded): Fold each seasoned fish fillet in half.
- Option 2 (Rolled): Roll the fish tightly, using a toothpick to secure if needed.
3- Heat the Pan:
- Place a non-stick pan on the stove over medium heat.
4- Sauté Potatoes:
- Add 2-3 tablespoons of cooking oil, followed by the drained, cubed potatoes. Sauté for a few minutes until lightly browned.
5- Add Aromatics and Dry Seasonings:
- Reduce heat to low. Add onions, sweet pepper, and garlic. Sauté until fragrant.
- Stir in curry, paprika, salt, all-purpose seasoning, white pepper, basil, and oregano.
6- Mix in Liquids and Remaining Bajan Seasoning:
- Gradually add up to 1 cup of water to the pan, preventing the mixture from drying.
- Stir in any remaining Bajan seasoning and ketchup. Allow mixture to boil, then reduce to a simmer.
7- Add the Fish and Tomatoes:
- Place the seasoned fish fillets into the simmering sauce, ensuring the liquid partially covers the fish.
- Scatter sliced tomatoes over the fish.
8- Steam the Fish:
- Cover the pan and let it simmer for about 10 minutes on low heat until the fish is cooked through.
9- Serve:
- Serve hot, ideally with Cou-Cou or your choice of side.
