Ingredients:
- 3 to 4 lb roasting chicken
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 medium onion (additional 2 small onions optional)
- 1 head of garlic
- 1 lemon
- Fresh tarragon, to taste (about 1 tablespoon chopped)
- Fresh thyme, about 3 sprigs
- 1 and 1/2 teaspoons salt
- 1/2 teaspoon cracked black pepper
Instructions:
1. Preheat your oven to 450°F (230°C).
2. Prepare a large roasting dish by lining it with sliced onions, cut about half an inch thick.
3. Ensure your chicken is at room temperature and any internal juices have been drained. Pat the chicken dry with paper towels to ensure the skin is prepped for seasoning.
4. With clean hands, carefully separate the skin from the meat of the chicken, making sure to avoid tearing it. This should be done both on the breasts and thighs.
5. Wash your hands thoroughly and proceed to make the butter mixture.
6. In a small bowl, combine the melted unsalted butter, olive oil, chopped tarragon, salt, and black pepper. Stir until well mixed.
7. Spread this butter mixture carefully under the chicken's skin, covering the breasts and thighs evenly. Use a spoon for easier application if needed.
8. Rub any remaining butter mixture all over the chicken's skin.
9. Fill the chicken cavity with halved garlic (no need to peel), three sprigs of thyme, and squeezed lemon halves. Any garlic skin can be added to the roasting dish.
10. Place the chicken on the bed of onions in the roasting dish.
11. Squeeze the lemon over the chicken, allowing some of the juice to combine with the onions in the pan.
12. Roast the chicken in the preheated oven until the internal temperature reaches 165°F (74°C), which will typically take about 1 hour and 20 minutes for a 3 to 4 lb chicken.
13. Let the chicken rest for 10-15 minutes before carving to allow the juices to redistribute.
14. Serve the roasted chicken with the caramelized onions and enjoy a flavorful, comforting meal.
