Ingredients
š½ 1 cup cornmeal
šæ 1 cup okra, sliced
š§ 1 teaspoon salt
š 3 cups water
š¢ļø 2 tablespoons vegetable oil
š§ 2 cups okra cooking water
Instructions
1- Prepare the Okra:
- In a medium saucepan, add sliced okra, a pinch of salt, and 1 tablespoon of vegetable oil. Pour in enough water to just cover the okra.
- Bring to a boil, then reduce the heat and let simmer until the okra is tender (approximately 5-7 minutes).
- Strain the okra, reserving the cooking water. Allow both the okra and the cooking water to cool.
2- Cook the Cornmeal:
- In a separate pot, combine cornmeal with 1 cup of cold or warm water, a pinch of salt, and 1 tablespoon of vegetable oil. Stir immediately to prevent lumps.
- Cook over medium heat, gradually adding regular water (approx. 2 additional cups) as the mixture starts to thicken. Keep stirring continuously.
- Once thickened, begin incorporating the cooled okra cooking water gradually into the cornmeal, stirring well after each addition.
3- Final Cooking Steps:
- Pour in the okra and mix until evenly distributed.
- Add the rest of the okra cooking water, if any remains. Cover the pot and let cook on low heat for another 3 minutes.
4- Mold and Serve:
- Lightly rub the inside of small bowls or containers with oil.
- Spoon the hot and soft fungi mixture into the prepared containers. Allow to cool and set before serving.
5- Enjoy:
