Ingredients
For the Telera Bread:
🍞 3 cups Harina de Trigo, Wheat Flour
🍬 1 tablespoon Azúcar, Sugar
🧂 1 sachet Picot Sal de Uvas, Grape Salt, Picot
🧂 1 teaspoon Sal, Salt
🍞 1 tablespoon Levadura, Yeast
💧 1 ½ cups Agua Tibia, Warm Water
🍬 2 tablespoons Azúcar, Sugar
🫒 1 tablespoon Aceite, Oil
For the Torta Filling:
🧈 Butter for toasting bread
🥄 1-2 tablespoons Mayonnaise, spread
🌶️ 1-2 tablespoons Chipotle chili paste, spread
🥑 ½ Avocado, sliced or mashed
🍖 1 large, thick slice or 2-3 regular slices Ham, grilled
🍅 3-4 thin slices Tomato
🥬 A generous handful Lettuce, shredded
🧀 Queso Oaxaca, Oaxaca Cheese or Quesillo, shredded
🧂 Salt, a pinch, for lettuce/tomato
Instructions
A. Preparing the Telera Bread:
1- Activate Yeast:
- Combine 1 ½ cups warm water, 2 tablespoons sugar, and 1 tablespoon yeast in a metal mixing bowl.
- Mix thoroughly and set aside until the mixture becomes frothy.
2- Mix Dry Ingredients:
- In another bowl, combine 3 cups wheat flour, 1 tablespoon of sugar, 1 teaspoon salt, and 1 sachet (5g) Picot Sal de Uvas.
- Stir with a spatula until well mixed.
3- Combine & Knead:
- Pour the yeast mixture into the dry ingredients and mix until a sticky dough forms.
- Transfer to a floured surface and knead until the dough is smooth, soft, and elastic.
4- First Proofing:
- Lightly grease a metal bowl with PAM cooking spray.
- Place the dough inside, cover with Kirkland Stretch-Tite Food Wrap, and let it rest for about 1 hour in a warm area.
5- Divide & Shape:
- Roll the dough into a log.
- Divide into 5 equal pieces for standard-sized teleras.
- Flatten each into an oval and create two indentations across each using a dough scraper.
6- Second Proofing:
- Place shaped teleras on a PAM-sprayed baking sheet.
- Cover and let rest for 20 minutes.
7- Bake:
- Preheat oven to 350°F (180°C).
- Spray the teleras with water before baking for 20 minutes until golden brown.
- Let cool for 5 minutes.
B. Assembling the Abundant Torta:
1- Slice Bread:
- Split a telera roll horizontally.
2- Butter & Toast:
- Butter the cut sides and toast in a hot frying pan until golden and crisp.
3- Spread Condiments:
- Spread mayonnaise on one half, chipotle paste on the other.
4- Add Fillings:
- Layer with avocado, grilled ham, tomato slices, lettuce, and Oaxaca cheese.
5- Assemble & Serve:
- Place the top half gently and slice the torta for easier handling.
- Serve immediately.
