Ingredients

š„ 1 teaspoon baking powder
š§ ¾ teaspoon salt

š„ 1 egg
š§ 2/3 cup water
š„© Ā½ pound ground beef
š§ ½ teaspoon salt
š ½ teaspoon black pepper
šæ ½ teaspoon thyme

¼ cup onion, finely chopped
š« ¼ cup green bell pepper, finely chopped
š§ 1 clove garlic, finely chopped
š¦ 1 teaspoon recado or achiote paste
š Water to dissolve recado
š¶ 1 teaspoon Worcestershire sauce

1 tablespoon ketchup
š§ 1 ½ cups water
š½ 1 tablespoon cornstarch
š§ 1 tablespoon water
š¶ļø Habanero (optional)
Instructions
1- Prepare the Dough:
- In a mixing bowl, combine the flour, baking powder, and salt. Add the shortening and mix until the mixture resembles coarse crumbs.
- Beat the egg with 2/3 cup of water and gradually add to the flour mixture. Knead until a smooth dough forms. Cover with a cloth and let it rest while you prepare the filling.
2- Make the Filling:
- In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
- Add salt, black pepper, thyme, onion, green bell pepper, and garlic to the beef. Cook for 5 minutes, stirring occasionally.
- Dissolve recado in a little water and add to the beef mixture.
- Stir in Worcestershire sauce, ketchup, and 1 ½ cups of water. Bring to a simmer.
- Mix cornstarch with 1 tablespoon of water to form a slurry. Add to the beef mixture and cook until thickened. If using habanero, add it now for a spicy kick.
3- Assemble the Pies:
- Preheat the oven to 375°F (190°C).
- Roll out the dough on a floured surface to about 1/8 inch thick. Use a Wilton cookie cutter to cut out circular dough pieces.
- Place a spoonful of filling onto half of the circles. Cover with another piece of dough and crimp the edges with a fork to seal.
- Place pies on a baking sheet and bake for 25 minutes, or until golden brown.
4- Serve:
- Let the pies cool slightly before serving. Enjoy them warm with your favorite hot sauce on the side.
