🍷 375ml Don Valentin Lacrado white wine

🌶️ 1 each red, yellow, and green bell pepper, ~300-400g, sliced
🌶️ 2-3 spicy chili peppers, Ají picante, sliced
🥕 2-3 medium carrots, ~200-300g, sliced
🧄 3-4 cloves garlic, minced
🍅 500-700ml crushed tomatoes
🧂 Dos Anclas salt, Parrillera variety
⚫ Dos Anclas black pepper, Pimienta Negra en grano
🥔 1 kg potatoes, pre-cooked al rescoldo, skin on, chopped
🌿 Small bunch fresh parsley
🌿 2-3 bay leaves
🌶️ 1-2 tablespoons Dos Anclas paprika, Pimentón extra
🌿 1 tablespoon Dos Anclas oregano
🥄 2-3 tablespoons cooking oil, corn or sunflower
Instructions
1- Heat the Disco:
- Place the large metal disco over a hot charcoal grill until thoroughly heated.
2- Start Cooking:
- Pour 2-3 tablespoons of oil into the disco.
- Add the chicken pieces and brown each side for 5-7 minutes until golden and crispy.
3- Season:
- Generously season the chicken with salt.
4- Add Vegetables:
- Mix in the sliced bell peppers, onions, and carrots around and over the chicken.
- Lightly salt the vegetables.
5- Add Sausage and Spices:
- Incorporate the sausage pieces and sprinkle paprika over the ingredients.
- Stir gently to evenly distribute.
6- Add Garlic and Chilies:
- Add minced garlic and chili peppers for spice.
7- Deglaze:
- Pour in the white wine, allowing it to simmer and reduce, evaporating the alcohol.
8- Build the Sauce:
- Add the crushed tomatoes, stirring them into the mix.
9- Finish with Potatoes and Herbs:
- Add the pre-cooked potatoes, oregano, whole parsley sprigs, and bay leaves.
10- Simmer:
- Cover partially and let simmer for about 30 minutes, ensuring all flavors meld and the chicken is tender.
