š„ 1 egg yolk
š„ 1 tablespoon milk
Seeds for Topping:

Instructions
1- Activate Yeast:
- Warm 125g of water to around 37°C using the thermometer for accuracy.
- Add 7g of dehydrated baker's yeast. Stir until dissolved.
- Let it rest for 10 minutes until frothy.
2- Combine Dry Ingredients:
- In your KitchenAid's stainless mixing bowl, mix 350g semolina, 150g of T45 flour, 20g of sugar, and 5g salt.
- Form a well in the center.
3- Add Wet Ingredients:
- Pour 125g whole milk, 30g egg white, 1 egg, and 60g sunflower oil into the well.
- Add the yeast mixture.
4- Knead Dough:
- Use the dough hook to knead for 5 minutes.
- Gradually integrate remaining 80g of T45 flour over 10 minutes until dough is homogeneous and smooth.
5- First Rise:
- Shape dough into a ball and cover with a kitchen towel. Let rise for 1.5 to 2 hours until double in size.
6- Divide and Shape:
- After deflating the dough, divide it into two equal portions.
- Flatten each portion with a rolling pin and mold into round discs, about 2 cm thick.
7- Second Rise:
- Place discs on baking sheets, cover, and let rise for another hour.
8- Bake:
- Preheat your Neff oven to 190°C.
- Mix 1 egg yolk with 1 tbsp milk and brush over dough.
- Score dough and sprinkle fennel/poppy seeds.
- Bake for 16 to 18 minutes until golden brown.
9- Cool and Serve:
- Cool on a cooling rack before serving. Khobz Dar can be frozen for later use.
