Ingredients
š« 2 bags Dried Sorrel, Sorrel Dried Jamaica Hibiscus
š« 2 thumb-sized pieces Fresh Ginger
šæ 1 tablespoon Pimento, Tropical Sun Allspice Whole
š§ 12 cups Water
š¬ 3 cups Brown Sugar
š„ 1 1/2 cups Jamaican White Overproof Rum, optional
Instructions
1- Wash the Sorrel:
- Place 2 bags of dried sorrel in a stainless steel strainer over a bowl filled with cold water.
- Spin, shake, and press the sorrel to remove impurities. Repeat until the water is clear and initial excess color has been released.
- Discard the wash water.
2- Boil the Water:
- Pour 12 cups of water into a large non-stick cooking pot with a lid, possibly from the CAROTE brand.
- Set the stove to high heat.
3- Prepare the Ginger:
- Slice the ginger into thin pieces.
- Use a metal garlic press with a blue scraper to extract juice and some pulp directly into the pot.
- Add the remaining ginger slices.
4- Add the Spices and Sorrel:
- Stir in 1 tablespoon of whole pimento and the washed sorrel.
- Cover with the lid.
5- Bring to a Boil and Steep:
- Allow the mixture to reach a rolling boil and then turn off the heat immediately.
- Let it cool and cover to steep overnight (8+ hours).
6- Strain the Sorrel:
- The next day, use a fine-mesh strainer over a clean bowl to separate the liquid from the solids.
- Wearing gloves, squeeze remaining liquid from solids before discarding them.
7- Sweeten the Sorrel:
- Mix in 3 cups of brown sugar to the strained liquid.
- Use a wooden spatula to ensure all sugar dissolves.
- Adjust the sweetness to taste.
8- Add Rum (Optional):
- For an alcoholic version, stir in 1 1/2 cups of Jamaican white overproof rum.
- Mix thoroughly.
9- Bottle and Serve:
- Store the finished sorrel drink in bottles for refrigeration or serve immediately over ice.
