🐖 Cured Pig's Tails, pre-boiled twice
🧅 1/2 - 1 medium Onion, sliced
🥥 2 tablespoons Coconut Oil
🍃 1-2 tablespoons Herb Mix including oregano, thyme, chili flakes
🧂 Garlic Salt, small amount
🍂 2-3 Fresh Thyme Leaves
Instructions
1- Prepare the Peas:
- Wash 2 cups of split peas thoroughly under cold water.
- Place the split peas into a "Princess House" stainless steel pot.
2- Add Water and Seasonings:
- Pour approximately 8 cups of water into the pot using a Pyrex measuring cup.
- Add the chopped garlic, bay leaves, and butter to the pot.
3- Cook the Peas:
- Set the stove to medium heat and begin cooking the split peas.
- Allow the split peas to cook for 1.5 to 2 hours, adding more water after about 45 minutes if necessary.
4- Prepare the Pig's Tails:
- In a separate process, pre-boil the cured pig's tails twice, discarding the water after the first boil to remove excess salt.
5- Incorporate Pig's Tails:
- Once the split peas are softened, add the pre-boiled pig's tails to the pot.
- Cook the mixture for an additional 45 minutes until the split peas are fully soft and mashed.
6- Sauté Aromatics:
- Meanwhile, heat coconut oil in a small frying pan.
- Sauté the sliced onions and herb mix in the hot oil until they become aromatic.
7- Combine and Season:
- Transfer the sautéed onions and herbs into the pot of soup.
- Season the soup with garlic salt and fresh thyme leaves, stirring well to combine.
