Flaxseed and Almond Cookies

Delicious Flaxseed and Almond Cookies

Ingredients:

• 1 cup all-purpose flour.

• 40 g olive oil.

• 30 gr of corn oil, you can also use coconut oil, or any vegetable oil.

• 3 tablespoons flaxseed.

• 5 tablespoons water.

• 1/2 tablespoon vanilla.

• 1/2 teaspoon baking powder.

• 50 g white sugar.

• 50 g brown sugar.

• 2 tablespoons rolled oats.

• 40 g dark chocolate chips.

• 50g of almonds, or any other nuts you have at home.

Process:

1- Add the water to the flaxseed and let it sit for approximately 15 minutes. Flaxseed is a good substitute for eggs in vegan baking recipes.

2- In a bowl, add the brown and white sugars, along with the oils, and mix well until well combined.

3- Next, add the flaxseed, vanilla, and salt, and continue mixing until everything is well combined.

4- Add the flour, the sifted baking powder, and the rolled oats, and mix with a spatula. Finally, add the chocolate and the chopped almonds.

5- Once you have the cookie dough ready, place it in a container and refrigerate for 1 hour. After the time has elapsed, remove the dough from the refrigerator and shape the cookies. Roll them into balls, place them on a baking sheet lined with baking paper or a silicone mat, and bake for approximately 15 minutes, or until golden brown.

6- After the time has passed, remove from the oven and wait for these delicious cookies to cool, so you can enjoy their great flavor.
