- 1 1/2 cups all-purpose flour (180 grams)
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 cup (113 grams) unsalted butter, room temperature
- 1/2 cup granulated sugar
- 1/3 cup sour cream
- 1 large egg
- 1/4 cup milk
- 2 teaspoons vanilla extract

Instructions:
1. Preheat your oven to 325°F (165°C). Line an 8x8 inch baking pan with parchment paper, leaving an overhang for easy removal.
2. For the crumb topping: In a bowl, combine 3/4 cup flour, granulated sugar, brown sugar, salt, and cinnamon. Break up any large clumps of brown sugar by hand for a uniform mixture. Pour in the melted butter and mix with a fork until the mixture resembles wet sand with varying sizes of crumbles. Sprinkle in the additional 3/4 cup of flour and mix until you have crumbles ranging from big boulders to small granules. Set aside.
3. For the cake: In a separate bowl, whisk together 1 1/2 cups flour, 1/4 teaspoon salt, baking soda, and baking powder. Set aside.
4. In the bowl of your stand mixer or in a large bowl with a hand mixer, cream together the 1/2 cup butter and granulated sugar for about 3 minutes until light and fluffy.
5. Measure out 1/3 cup of sour cream and add the egg. Mix into the butter and sugar until well combined. Scrape down the sides of the bowl as needed.
6. Add the vanilla extract and milk to the butter mixture. Mix until just combined; it's okay if it looks slightly curdled.
7. Now, gently fold in the dry ingredients, mixing only until just incorporated. Do not overmix.
8. Transfer the cake batter to the prepared pan, smoothing the top with a spatula.
9. Sprinkle the crumb topping over the cake batter until evenly covered.
10. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
11. Let the cake cool before using the parchment paper to lift it out of the pan. Dust with powdered sugar if desired, and slice into squares.
12. Serve and enjoy your perfect slice of crumbly bliss!
