Ingredients
🥩 1 kilogram suadero, diamond scored (beef flank/belly)
🌶️ 6 green chilies, jalapeño or serrano
🍅 10 medium tomatillos, green tomatoes
🌿 1 bunch cilantro, divided
🧅 1 large white onion
🧂 2 tablespoons coarse grain salt
🛢️ Nutrioli cooking oil, dash
💧 Water
🍋 Lime juice, a few drops
🌽 Corn tortillas
Instructions
1- Prepare the Suadero:
- Place the suadero in a pressure cooker.
- Add enough water to cover the meat and 2 tablespoons of salt.
2- Cook the Suadero:
- Seal the pressure cooker and heat until it starts to hiss.
- Lower the heat and cook for 45 minutes. The meat should be tender when done.
3- Prepare Salsa Ingredients:
- Boil tomatillos and chilies in a saucepan with enough water to cover them.
- Cook until the color changes (about 10-15 minutes).
4- Chop Garnish Ingredients:
- Finely chop the onion and a portion of the cilantro for garnishing.
- Set aside.
5- Make the Salsa:
- Blend the cooked tomatillos and chilies with the remaining cilantro.
- Add 1 cup of water and 1 tablespoon of salt until smooth and thick.
6- Shred/Chop Suadero:
- Remove the suadero.
- Shred or finely chop using a knife and fork.
7- Fry the Suadero:
- Heat a pan and add a dash of Nutrioli oil.
- Fry the suadero on low heat, stirring occasionally until crispy but not dry.
8- Assemble Tacos:
- Warm the corn tortillas.
- Add fried suadero, top with chopped onion and cilantro, a spoonful of salsa, and a squeeze of lime juice.

Total Time: 1 hour 30 minutes to 2 hours
