Introduction: Hello food enthusiasts! Today, I’m delighted to present to you a cherished family recipe that’s a true emblem of Québécois culture – the Traditional Québécois Sugar Pie. This simple yet profoundly delicious dessert requires only a handful of ingredients but yields a depth of flavor that will transport you straight to the comforting hearths of Quebec. Let’s roll up our sleeves and make this sweet delight together!
Ingredients:
- For the Pie Crust:
- 200g (about 1 2/3 cups) all-purpose flour
- 113g (1 stick) unsalted butter, cold and cubed
- 1/2 teaspoon salt (if using unsalted butter)
- 2-4 tablespoons ice water
- For the Filling:
- 750g (about 3 1/2 cups) dark brown sugar (cassonade)
- 80g (about 2/3 cup) all-purpose flour
- 1 can (354 ml) evaporated milk (NOT sweetened condensed milk) or heavy cream
- 2 large eggs
- 1 teaspoon maple essence (optional, for a maple-flavored variant)
Instructions:
1. Begin with the pie crust. In a large mixing bowl, combine flour and salt. Add the cubed butter. Using your fingers or a pastry cutter, work the butter into the flour until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining. Slowly add ice water, one tablespoon at a time, mixing until the dough starts to come together.
2. Turn the dough out onto a lightly floured surface and shape it into a disc. Wrap and chill in the refrigerator for at least 1 hour. This step can be done up to 24 hours in advance.
3. On a floured surface, roll out the chilled dough to fit a 9-inch pie plate. Transfer the dough to the pie plate, trim any excess, and crimp the edges. Place it in the fridge while you prepare the filling.
4. Preheat your oven to 350°F (175°C).
5. In a large mixing bowl, combine the dark brown sugar and flour. Stir in the evaporated milk until well combined. Beat in the eggs, one at a time, until the mixture is homogeneous. If desired, add maple essence for a maple-flavored twist.
6. Pour the filling into the prepared pie crust. Bake in the preheated oven for approximately 40-45 minutes or until the filling is set and the crust is golden brown.
7. Allow the pie to cool completely on a wire rack before slicing.
