Instructions
1- Prepare the Pork:
- Place the pork shoulder in a large metal bowl.
- Add white vinegar and water.
- Rub and clean the pork.
- Drain and rinse twice.
2- Apply Dry Rub:
- Mix 1 1/2 tablespoons each of meat seasoning, orange spice, all-purpose seasoning, and jerk seasoning.
- Coat pork thoroughly.
3- Prepare Green Marinade:
- Blend 1 cup water, thyme, garlic, ginger, pimento leaves, pimento berries, scallions, and 2 large onions in a Ninja blender.
- Add browning and some dry rub.
- Blend to smooth.
4- Marinate the Pork:
- Pour the blended marinade over the pork.
- Massage well.
- Place in a Ziplock bag.
- Refrigerate for 2 days.
5- Parboil the Pork:
- Transfer pork to a large cooking pot.
- Add water if needed.
- Boil on Amana stove for 15 minutes.
- Ensure pork is tender but not fully cooked.
6- Prepare Grill for Smoking:
- Set up BBQ grill with charcoal.
- Ignite and allow to smoke.
- Place cast iron pan with pimento berries and vegetable oil over the fire for pimento smoke.
7- Grill the Pork:
- Place parboiled pork on grill.
- Grill for 45 minutes, turning continuously.
- Every 15 minutes, dip pork in warm marinade.
8- Serve:
- Place grilled pork on cutting board.
- Slice.
- Serve with non-spicy peppers and ketchup, wrapped in foil if desired.
