🌿 4 sprigs Fresh Thyme

🧄 ½ tbsp Goya Chicken Bouillon Powder or Adobo
🥕 2 cups Vegetable Stock
💧 2 cups Water
🫒 Olive Oil for cooking
Instructions
1- Preparation:
- Begin by peeling the butternut squash and cutting it into manageable chunks.
- Quarter the onion, chop the green pepper, and peel the garlic cloves.
2- Sauté Vegetables:
- Heat a generous drizzle of olive oil in a large caldero over medium heat.
- Add the butternut squash, onion, green pepper, and garlic cloves.
- Stir to ensure all vegetables are coated in the oil.
3- Add Liquids and Seasonings:
- Pour in the vegetable stock and water.
- Add the thyme, recao, and Goya chicken bouillon powder or Adobo.
4- Cook the Soup:
- Stir all the ingredients well, bringing the mixture to a boil.
- Reduce the heat and let it simmer until the vegetables, particularly the butternut squash, are very tender.
- This should take about 20-25 minutes.
5- Remove Thyme Stems:
- Once cooked, use tongs to remove the thyme sprigs from the pot.
6- Blend the Soup:
- Using an immersion blender, puree the soup directly in the pot until smooth.
- If you don't have an immersion blender, carefully transfer the soup to a traditional blender and blend until creamy.
7- Adjust Consistency and Flavor:
- If the soup is too thick, incorporate more water while blending to reach your desired consistency.
