Ingredients:
- Fresh berries: strawberries, blueberries, raspberries, blackberries (1 1/2 cups of each)
- Vodka (6 cups total, 1 1/2 cups for each berry type)
- Water (6 cups total, 1 1/2 cups for each berry syrup)
- Granulated sugar (Equal parts to the water after reduction, approximately 4-6 cups)
- Gloves (to protect your hands from stains)
Equipment:
- Four 1-quart mason jars with lids
- Fine mesh strainer
- Coffee filter
- Funnel
- Medium saucepan
- Wooden spoon or masher
- Sealable bottles for finished liqueurs
Prep Time: 30 minutes
Cook Time: 30 minutes (for syrup) + infusion time (2 weeks to 1 month)
Total Time: About 1 hour active time + infusion time
Cooking Tips:
- Wash and prepare your berries thoroughly, hulling the strawberries if necessary.
- For a stronger liqueur, use a higher-proof vodka.
- The infusion time can affect both color and flavor intensity.
- Adjust the sweetness of your liqueur to taste.
Instructions:
1. Prepare the Berries:
- Rinse the strawberries, blueberries, raspberries, and blackberries thoroughly.
- Hull the strawberries if not done already.
- Fill each mason jar with 1 1/2 cups of one type of berry.
2. Infuse with Vodka:
- Pour 1 1/2 cups of vodka into each jar, making sure the berries are fully submerged.
- Seal the jars tightly and give them a gentle shake.
- Store the jars in a cool, dark place for 2 weeks to 1 month, shaking occasionally.
3. Make Berry Syrup:
- In a medium saucepan, combine 1 1/2 cups of each type of berry with 1 1/2 cups of water.
- Bring to a boil, then reduce to a simmer.
- Mash the berries to release their juices and let simmer until the mixture has reduced and is very flavorful.
- Strain through a mesh strainer, then through a coffee filter to remove all sediment.
- While still hot, add equal parts sugar to the berry water to create a simple syrup. Stir until dissolved.
4. Mix Liqueur:
- Once the berries have infused the vodka (and have turned pale), strain the vodka using a coffee filter. Discard the berries.
- Combine the infused vodka with the berry simple syrup, starting with a 3-to-1 ratio of vodka to syrup.
- Taste and add more syrup if desired, keeping in mind the balance of sweetness.
5. Bottle the Liqueur:
- Once the desired sweetness is achieved, pour the liqueur into clean, sealable bottles.
- Store in a cool, dark place until ready to serve.
Servings: This recipe yields approximately 6 cups of combined berry liqueurs (1 1/2 cups of each type).
