Instructions
1- Prepare the Yuca:
- Start by peeling the yuca.
- Cut it into large, manageable pieces for easier handling.
2- Boil the Yuca:
- Fill a stainless steel pot with water and add the chopped yuca.
- Bring the water to a rolling boil on a Teka gas stove.
- Cook until the yuca becomes soft, which should take about 20-25 minutes.
3- Mash the Yuca:
- Drain the water and transfer the yuca to a clear glass bowl.
- Use a metal fork to thoroughly mash the yuca until it's smooth and free of lumps.
4- Prepare the Cheese:
- Grate 300 g of fresh cheese until it is in fine, shredded strands.
5- Combine Ingredients:
- Add the grated cheese to the bowl of mashed yuca.
- Using your hands or a fork, mix them together until the ingredients are fully combined and form a pale, cohesive dough.
6- Shape the Sonsos:
- Take portions of the yuca-cheese mixture and shape them into small elongated cylinders or your desired form to create the mini sonsos.
7- Grill:
- Heat a black, ridged grill pan on the stove.
- Once hot, place the shaped sonsos onto the grill pan.
8- Cook Until Golden:
- Grill the sonsos, turning them occasionally to ensure even cooking, until they are golden brown with distinct grill marks on all sides.
9- Serve:
- Once cooked, remove the sonsos from the grill and serve them immediately while hot and crispy.
