Instructions:
1. In a small bowl, combine all the spices for the blackened seasoning: paprika, garlic powder, onion powder, dried thyme, oregano, cayenne, black pepper, and salt.
2. Pat the halibut fillets dry with paper towels, ensuring the surface is completely moisture-free.
3. Sprinkle about 2 teaspoons of the blackened seasoning on each fillet, pressing it into the skin to create an even crust. Be sure to cover all sides of the fish.
4. Heat the olive oil or vegetable oil over medium heat in a skillet or heavy-bottomed pan.
5. Once you see the oil slightly smoking, carefully place each fillet in the pan, leaving ample space between them.
6. Reduce the heat to medium-low and allow the fillets to cook undisturbed for 2-3 minutes or until you see a dark crust forming.
7. Gently flip the fillets and cook for an additional 2-3 minutes, or until the fish is cooked through and the other side is blackened.
