Jamaican Fish Tea, often referred to as fish soup, is a warm, comforting, and flavorful dish that showcases the vibrant spices and ingredients of Jamaican cuisine. This soup is light yet hearty, with flavors enhanced by fresh fish and a delightful medley of vegetables and seasonings.
Ingredients
š„£ 1 cup all-purpose flour
š½ 1/4 cup cornmeal
š§ 1/2 teaspoon salt
š§ 1/4 cup water
š½ 1 corn on the cob cut into half-moons
š 0.5 pound pumpkin peeled and cut into chunks
š 0.5 pound yellow yam peeled, washed with lime, and cut into cubes
š„ 2 small Irish potatoes peeled and diced
š 1 medium king fish head approximately 1.5-2 pounds, cut into pieces, washed with vinegar
š§ 5 cloves garlic peeled and smashed
š„ 1 small carrot diced
š§
2 stalks fresh scallion Jamaican type with purple roots, chopped
šæ 3 stalks fresh thyme
š¶ļø 1 whole Scotch Bonnet pepper
š« 1 tablespoon pimento (allspice berries)
š„ 3 tablespoons Grace Fish Tea Seasoning noodles sieved out
š§ 2 tablespoons all-purpose seasoning
š¶ 0.5 teaspoon fresh ground black pepper
š„ 2 tablespoons Grace Cock Soup Mix noodles sieved out
š§ Approximately 3-4 liters of water
š Lime for washing yam
š¶ Vinegar for washing fish
Instructions
1- Mix Dumplings:
- In a bowl, combine 1 cup all-purpose flour, 1/4 cup cornmeal, and 1/2 teaspoon salt.
- Gradually add 1/4 cup water, kneading by hand to form a cohesive dough.
- Cover and set aside.
2- Prepare Provisions:
- Slice 1 corn on the cob into half-moon pieces.
- Cut pumpkin into chunks.
- Prepare yellow yam and Irish potatoes, keeping them submerged in water to prevent oxidation.
3- Prepare Fish:
- Cut king fish head into smaller pieces.
- Wash thoroughly with vinegar.
4- Boil Water:
- Fill a BERGNER large cooking pot with approximately 3-4 liters of water.
- Bring to a boil.
5- Add Ingredients:
- Once boiling, add pimento berries, garlic, and half the thyme.
- Add pumpkin chunks and fish pieces.
6- Season:
- Add 1.5 tablespoons of Grace Fish Tea Seasoning.
- Cover and simmer for 15-20 minutes.
7- Add Provisions and Dumplings:
- When pumpkin is soft, add yellow yam, potatoes, and corn.
- Form dumpling dough into small balls, flatten, and add to the pot.
8- Enhance Flavor:
- Add carrot, scallion, remaining thyme, and Scotch Bonnet pepper.
- Stir in additional Grace Fish Tea Seasoning, black pepper, all-purpose seasoning, and Grace Cock Soup Mix.
9- Simmer:
- Cover and let simmer for another 10-15 minutes until the dumplings and provisions are cooked through.
10- Remove Solids:
- Use a ladle to remove thyme, fish bones, and Scotch Bonnet if desired.
11- Serve:
- Ladle hot fish tea into bowls and garnish as desired.
