Ingredients
🐖 1.2 kg pork loin
🧅 2 onions sliced into rings
🥔 400 g baby potatoes
🧂 2 teaspoons salt
🌶️ 1 teaspoon black pepper
🧄 6 cloves garlic crushed or mashed
🌿 1 teaspoon rosemary alecrim
🌿 1 teaspoon cumin
🥣 50 ml soy sauce
🍷 200 ml dry white wine
🍋 Juice of 1 lemon
🍅 1 tablespoon ketchup
🌭 1 tablespoon mustard
🍯 1 tablespoon honey
🍋 Juice of 1/2 lemon
Instructions
1- Prepare the Pork Loin:
- Score the fat cap of the pork loin with a knife to allow flavors to penetrate and fats to render.
- Season generously with salt and black pepper.
2- Create the Spice Rub:
- Rub rosemary and cumin evenly over the pork loin.
- Spread the crushed garlic cloves over the meat.
3- Marinate:
- Pour soy sauce over the pork, gently massaging the flavors into the meat.
- Add lemon juice and white wine, ensuring the pork is well-coated. Allow to marinate for at least 2 hours or overnight for best results.
4- Prepare for Baking:
- Preheat your oven to 180-200°C (350-400°F).
- Line a rectangular baking pan with onion rings as a base.
- Place the marinated pork loin on top of the onion bed.
5- Bake Initial Phase:
- Surround the pork with baby potatoes.
- Pour any remaining marinade over the ingredients in the pan.
- Cover with aluminum foil and bake for 1.5 to 2 hours.
6- Prepare the Basting Sauce:
- In a bowl, mix ketchup, mustard, honey, and the juice of half a lemon.
7- Caramelize:
- Remove the foil after the initial baking. Baste generously with the sauce using a silicone brush.
