Ingredients
🌽 1 cup (200ml) Biju Corn Flour
🥛 1 cup (170g) Natural Yogurt
🍳 2 whole Eggs
💧 1/2 cup (100ml) Water for scalding
💧 1/2 cup (100ml) Warm Water for kneading
🛢️ 1/2 cup (100ml) Oil
🧂 1 shallow tablespoon Salt
🧀 2 cups (200g) Grated Cheese Mussarela, Minas Padrão, or Minas Curado
🍾 4 cups (800ml) Polvilho Azedo Sour Cassava Starch
Instructions
1- Hydrate Corn Flour:
- In a mixing bowl, blend together 1 cup of Biju corn flour with 1 cup of natural yogurt.
- Stir well to combine and set aside to hydrate.
2- Prepare Polvilho:
- In a large mixing bowl, place 4 cups of sour cassava starch.
- Sieve the polvilho if it contains lumps for a smoother dough.
3- Boil Scalding Mixture:
- In a small red saucepan, combine 1/2 cup of water, 1/2 cup of oil, and 1 shallow tablespoon of salt.
- Bring the mixture to a boil on a Mondial electric hot plate.
4- Scald Polvilho:
- Pour the boiling mixture over the cassava starch.
- Quickly mix with a blue silicone spatula until the mixture becomes crumbly.
5- Combine Dough:
- Add the hydrated corn flour mixture and 2 whole eggs to the scalded polvilho.
- Begin mixing with the spatula, then use your hands to knead, gradually incorporating more warm water as needed for a smooth dough.
6- Incorporate Cheese:
- Work in 2 cups of grated cheese by hand, ensuring even distribution throughout the dough.
7- Preheat Oven & Prepare Tray:
- Preheat your oven to a high temperature.
- Lightly grease a copper-colored baking tray with butter.
8- Shape Biscuits:
- Grease your hands using a small decorative dish of oil.
- Form small portions of dough into finger-like biscuits and place them on the baking tray with some space between each.
9- Bake:
- Place the tray in the preheated oven to let the biscuits rise and puff.
- Reduce the oven temperature to 180-200°C and bake until golden brown.
10- Serve:
- Once baked, remove from the oven and serve warm.
