Ingredients
π₯ 500g flour
π§ 1 teaspoon salt
π 10g dry yeast
π§ 25 cl warm water
π« 6 teaspoons olive oil
πΏ 1 teaspoon herbs de Provence
π« 150g olives
For Decoration:
π« Few olives
π§ Grated cheese
Instructions
1- Prepare the Dough:
- In a large mixing bowl, combine the flour and salt. Make a well in the center
- Dissolve the dry yeast in warm water and let sit for 10 minutes until foamy
- Pour yeast mixture and olive oil into the well, add herbs de Provence
- Mix ingredients until dough forms
- Knead for 10 minutes until smooth and elastic
- Fold in chopped olives evenly
2- First Rise:
- Place dough in oiled bowl
- Cover with damp cloth
- Let rise in warm place for 1 hour until doubled
3- Shape the Fougasse:
- Preheat oven to 220Β°C (430Β°F)
- Punch down dough and place on floured surface
- Roll into oval shape, 1 cm thick
- Transfer to lined baking sheet
- Make leaf-like cuts with sharp knife
4- Second Rise and Decoration:
- Cover with cloth and let rise 20 minutes
- Decorate with olives
- Sprinkle with grated cheese
5- Bake:
- Bake 15-20 minutes until golden brown
- Cheese should be melted and bubbly
6- Serve:
- Cool slightly on wire rack
- Serve warm or at room temperature
