Instructions:
1. Preheat your oven to 200°F (93°C).
2. In a mixer, combine the egg whites, cream of tartar, and a pinch of salt. Start whipping on low and gradually increase speed.
3. Slowly add the super fine sugar while mixing. Aim for a slow, steady stream to prevent deflating the egg whites. Whip until you achieve stiff, marshmallowy peaks.
4. Once stiff peaks form, gently fold in the vanilla extract.
5. Prepare a piping bag fitted with a star tip (like an 869) and pipe meringue kisses onto parchment-lined baking sheets. Space them evenly.
6. Bake the meringue kisses in the preheated oven for one hour, then turn off the oven and leave them to dry in the oven for an additional 1-2 hours with the door closed.
7. While the meringues are baking, hull and slice 1 and 1/2 pounds of strawberries and macerate them with 2 tablespoons of sugar.
8. In a separate bowl, whip the heavy cream until it forms soft peaks. Optionally sweeten with confectioners' sugar to taste.
9. Once the meringues are cooled and dried, crumble enough to have roughly 2 cups.
10. To assemble the Eton Mess, layer crumbled meringues with macerated strawberries and whipped cream in a serving bowl or individual glasses. Repeat the layers until all ingredients are used.
11. Serve immediately for a delightful contrast of textures or let it meld together for a short time in the fridge for a softer sensation.
