Ingredients
🍬 250 grams white granulated sugar
🥚 7 large eggs separated into whites and yolks
🧈 80 grams pork lard or butter use a soft, pale yellow kind
🥄 15 grams Baking Powder Royal brand
🌾 250 grams all-purpose flour
🍦 1 capful vanilla extract Philipo brand, red-colored liquid
Instructions
1- Prepare Egg Whites:
- Separate 7 egg whites into a KitchenAid Heavy Duty stand mixer's stainless steel mixing bowl.
2- Beat Egg Whites:
- Attach the whisk attachment and begin beating the egg whites at medium speed.
3- Add Sugar Gradually:
- Once the egg whites start foaming, slowly add 125 grams of sugar half the total. Continue to beat.
4- Thicken and Add Remaining Sugar:
- As the mixture thickens, add the rest of the sugar and increase the mixer speed.
- Beat until stiff, glossy peaks form.
5- Prepare Yolk Mixture:
- In a separate container, mix 7 egg yolks with 80 grams of pork lard or butter until well combined.
6- Add Vanilla:
- Mix in 1 capful of Philipo vanilla extract.
7- Combine Mixtures:
- Gently fold the yolk mixture into the beaten egg whites using an enveloping motion.
8- Incorporate Dry Ingredients:
- Add 125 grams of flour and 15 grams of Baking Powder Royal.
- Fold gently into the batter.
9- Add Remaining Flour:
- Incorporate the remaining 125 grams of flour, folding softly until smooth.
10- Prepare Baking Pan:
- Lightly grease and flour the baking pan.
11- Transfer Batter:
- Pour the batter into the prepared pan and spread evenly without tapping.
12- Bake:
- Preheat the oven to 150°C (302°F).
- Place the pan inside and bake for 15 to 20 minutes until golden brown and springy to the touch.
