Authentic Dominican Chicken Sancocho
Sancocho de Muslos de Pollo is a delightful and comforting Dominican stew, rich in flavor and tradition. This simplified version focuses solely on chicken drumsticks, offering a quick yet nourishing main course that embodies the essence of Dominican cuisine. Ingredients
🍗 5 chicken drumsticks
🧄 1/4 teaspoon garlic powder
🧂 1/4 teaspoon adobo seasoning
🌿 1/4 teaspoon oregano powder
🧃 2 chicken bouillon cubes
📦 1 packet Sazón Goya con culantro y achiote
🌶️ A few grinds black peppercorn McCormick Black Peppercorn Grinder
🛢️ 1-2 tablespoons oil
🌿 Half of a large yautía taro root, peeled and chopped
🎃 A piece of Panama Pumpkin/Calabaza Panama GPEN, peeled and chopped
🍌 2 green plantains rulos, peeled and sliced thick
🌿 A piece of yuca cassava, peeled and chopped
🧅 1 red onion, cut into large pieces
🫑 2 whole Cubanela peppers
🌿 A bunch of fresh cilantro
🍬 1 teaspoon sugar
💧 5-6 cups water
Instructions
1- Season Chicken:
- Place chicken drumsticks in a large mixing bowl.
- Sprinkle with garlic powder, adobo seasoning, and oregano powder.
- Mix well and let sit.
2- Caramelize and Brown Chicken:
- Heat a large pot over medium-high heat. Add the oil and sugar.
- Allow sugar to caramelize until dark brown.
- Add chicken drumsticks, browning them on all sides for about 10 minutes.
- Grind black pepper over chicken while browning.
3- Prepare Vegetables:
- While chicken cooks, chop yautía, pumpkin, plantains, and cassava into chunky pieces.
- Cut red onion into large pieces.
- Keep peppers and cilantro whole.
4- Combine and Simmer:
- Add vegetables and aromatics (onion, peppers, cilantro) to the pot.
- Add 1 chicken bouillon cube.
- Pour in water, submerging ingredients.
- Add Sazón Goya packet and bring the mixture to a boil.
- Reduce heat to medium; cover and simmer for 20 minutes until vegetables soften.
5- Thicken the Broth:
- Remove some cooked vegetables, mash into a paste, and return to the pot – this thickens the broth.
- Simmer for another 5 minutes.
6- Finish and Serve:
- Remove and discard large onion pieces, peppers, and cilantro stems.
- Adjust seasoning to taste.
- Serve hot, ideally with white rice and avocado slices.
