Instructions
1- Prep the Ingredients:
- Warm the milk gently.
- Melt the butter in a small saucepan over low heat.
- Ensure the milk is warm but not too hot to activate the yeast effectively.
2- Mix the Dough:
- In the bowl of a KitchenAid stand mixer, combine yeast, warm milk, flour, brown sugar, and salt.
- Pour in the melted butter.
- Attach the dough hook and mix on Speed 2 for approximately 8 minutes until a smooth, elastic dough forms.
3- Add Flavors:
- Gradually incorporate the selected mixed spices and raisins into the dough.
- Increase the mixer speed to 6, mixing until the dough is fully developed and all ingredients are evenly distributed.
4- Rest the Dough:
- Perform the windowpane test to ensure gluten development.
- Ball up the dough and let it rest in a lightly floured metal mixing bowl, covered with plastic wrap, for 30 minutes.
5- Shape the Bun:
- Knead the dough briefly by hand post-resting.
- Shape it into a round bun, covering it again to proof for another 30 minutes in a warm place.
6- Prepare for Baking:
- Preheat the oven.
- Place the bun on a baking sheet lined with a Silpat mat.
- Use a serrated knife to make two parallel score lines on top of the bun.
