Ingredients:
- 750 grams of apples (Boskop apples preferred, but other varieties are fine)
- 1 cinnamon stick
- 1/2 vanilla pod
- 2 allspice berries
- 3 cloves
- 100 milliliters of water
- 1 tablespoon of sugar (optional, depending on the sweetness of your apples)
Instructions:
1. Start by peeling your apples. You can use a vegetable peeler or a knife for this task.
2. Cut the peeled apples in half, then quarter them to easily remove the cores. We don't want those in our puree!
3. Dice the apple quarters into pieces. The size of the pieces depends on whether you prefer your compote chunky or smooth. Personally, I like them finely chopped.
4. Transfer the chopped apples into a pot, scraping out every last bit from your cutting board.
5. Now, let's spice it up! Add one cinnamon stick, three cloves, and two allspice berries into the pot with the apples.
6. For the vanilla pod, slice it open and scrape out the seeds with a knife. Add both the seeds and the pod into the pot.
7. Pour in 100 milliliters of water and add a tablespoon of sugar, if desired. Remember, the sweetness depends on your apples, so taste and adjust accordingly.
8. Cook the compote on the stove over medium heat and let it simmer for about 15 minutes.
Cook Time: 15 minutes
Total Time: 25 minutes (10 minutes prep, 15 minutes cook)
Equipment: Pot, Knife, Cutting board, Vegetable peeler (optional)
Servings: 4-6
Tips:
- Continuously taste your compote as it cooks to adjust the sugar to your liking.
- If the apples are too chunky for your taste, you can mash them a bit with a potato masher or fork.
- For longer shelf life, while the compote is still hot, fill it into cleaned jars, seal them, and store them in the fridge. They can last for several months unopened.
After 15 minutes, the apples should have softened and begun to break down, creating a beautiful apple compote consistency. Strain out the spices, and your compote is ready to serve! If you pour this hot into sterilized jars and seal them, you can store it in the refrigerator for several months, although it's usually too delicious to last that long!
