Instructions:
1. Take your cleaned fish and carefully skewer it onto your pre-soaked wooden stick. Ensure to slide the stick along the spine, avoiding the belly cavity, so the fish doesn't slip off while grilling.
2. Using a sharp knife, make a few diagonal incisions on each side of the fish. This helps the seasoning to penetrate better.
3. Prepare the marinade by finely chopping fresh herbs—parsley and rosemary—and placing them into a mortar. Add minced garlic and crush the ingredients into a paste.
4. To the herb mixture, add chilli flakes (if using), salt, and black pepper. Mix well.
5. Squeeze in the juice of half a lemon and pour in a generous amount of olive oil. Crush and mix all the ingredients to create a smooth marinade.
6. Using a brush, apply the marinade thoroughly inside the belly cavity and across all sides of the fish, working it into the incisions.
7. Preheat your charcoal grill. Using lump charcoal is recommended for the best flavor, avoid using briquettes.
8. Place the fish approximately 10 centimeters above the glowing coals, without the need for a grilling grate. Grill the fish, turning occasionally, until cooked through and slightly charred on the outside, about 10-15 minutes depending on the heat and size of the fish.
9. Once done, remove the fish from the grill and let it rest for a few minutes before serving.
