Turkey Breast:

    Pastor Marinade:
  • 🌢️ 3 guajillo peppers
  • πŸ§„ 4 garlic cloves
  • πŸƒ 3 bay leaves
  • πŸ§… 1/2 onion
  • 🌿 1 cinnamon stick
  • πŸ”΄ 3.5 oz achiote paste
  • 🌿 1/2 tsp cumin
  • βšͺ 1 tsp white pepper
  • 🌿 1 tsp Mexican oregano
    Stuffing:
  • πŸ₯“ 5 strips of bacon
  • πŸ§… 1/2 onion
  • πŸ§„ 2 minced garlic cloves
  • 🍍 2 cups diced pineapple
  • πŸ— 2 cups chicken stock
  • 🍞 6 cups of your favorite stuffing mix
    Additional:

Instructions:

  1. Prepare the Pastor Marinade:
    • Boil the guajillo peppers, garlic cloves, bay leaves, half onion, and cinnamon stick in a pot.
    • Once softened, remove the cinnamon stick and bay leaves. Blend the mixture with achiote paste, cumin, white pepper, Mexican oregano, and some water from the boiling pot to form a smooth marinade.
  2. Make the Stuffing:
    • In a pan, cook the bacon until crispy. Remove and chop into small pieces.
    • In the same pan, sautΓ© half an onion and the minced garlic until soft.
    • Add the diced pineapple and chicken stock to the pan. Stir well.
    • Mix in the crisped bacon and your favorite stuffing mix. Let it cook for a few minutes until fully combined. Set aside.
  3. Prepare the Turkey Breast:
    • Slice the turkey breast horizontally into three or four parts. Place plastic wrap on both sides and use a meat tenderizer to flatten to an even thickness.
    • Season the turkey slices with salt to taste.
  4. Assemble and Cook:
    • Take each turkey slice, brush with a bit of marinade, place a portion of stuffing on it, and roll tightly.
    • Secure each roll with kitchen twine.
    • Place the rolls in a greased baking dish, pour the remaining marinade over the top, and bake in a preheated oven at 385Β°F (195Β°C) for 30 minutes.
    • After 30 minutes, brush the turkey with the pan sauce and place under a broiler for a few minutes to caramelize and create a slight char.
  5. Serve:
    • Allow the turkey rolls to rest for a few minutes before slicing. Serve with extra stuffing and enjoy your festive creation.
