Ingredients

Instructions
1- Boil the Vegetables:
- Peel and cut carrots into large pieces. Place in a small saucepan, cover with water, and add a pinch of salt.
- Peel and cut potatoes into large pieces. Place in a medium saucepan, cover with water, and add a pinch of salt.
- Place eggs in another medium saucepan, cover with water.
2- Cook:
- Bring all saucepans to a boil. Cook the carrots and potatoes until fork-tender, not mushy. Hard-boil the eggs for 10-12 minutes.
3- Cool:
- Remove cooked items and allow them to cool completely before chopping.
4- Chop Ingredients:
- Dice the cooled carrots, potatoes, and peeled hard-boiled eggs.
- Dice the pickled cucumbers and deli ham. Add to a large mixing bowl.
5- Combine:
- Add mayonnaise, salt, and black pepper to the mixing bowl.
- Use a spatula to thoroughly mix until all ingredients are well combined and evenly coated.
6- Chill:
- Cover the bowl with plastic wrap and refrigerate for at least 2-3 hours, preferably overnight.
