Ingredients
š½ 1 cup Madan Gougous corn flour
š§ 3 cups water 2 cups for boiling with spices approximately 1 cup for mixing with corn flour
š„ 1 can evaporated milk Brand not visible
š Approximately 1 cup powdered sugar or regular white sugar to taste
ā 3-4 pieces star anise
š 2 pieces bay leaf
š Zest of 1 lime
š§ Pinch of salt
š„„ Few drops of almond extract
šÆ 1 tablespoon honey Brand not visible
Instructions
1- Prepare the Spiced Water:
- In a saucepan or pot, pour 2 cups of water and place it on an electric coil burner.
- Add lime zest, star anise, and bay leaves into the water; bring to a boil.
2- Mix Corn Flavour:
- In a separate bowl, combine 1 cup of Madan Gougous corn flour with about 1 cup of water.
- Whisk thoroughly until smooth and lump-free.
3- Combine and Cook:
- Once the spiced water is boiling, slowly pour the corn flour mixture while constantly whisking to avoid lumps.
- Gradually stir in 1 can of evaporated milk, maintaining a steady whisk.
4- Add Sweetness and Flavor:
- Mix in the sugar, adjusting the sweetness to your preference.
- Add a pinch of salt and incorporate 1 tablespoon of honey.
5- Simmer and Finish:
- Let the mixture simmer on low heat for 10-15 minutes to ensure full cooking, or longer for a thicker consistency.
- Stir in a few drops of almond extract just before serving.
6- Serve Akasan:
- Your Akasan is ready to be served.
- Garnish with a cinnamon stick, bay leaf, and a sprinkle of cinnamon powder if desired.
