Instructions:
1. Begin by gently washing your rhubarb stalks, then chop them into small pieces.
2. In a medium saucepan, combine the chopped rhubarb, granulated sugar, and 2 cups of water. Bring the mixture to a boil over medium-high heat.
3. Once boiling, reduce the heat and let it simmer for about 10-15 minutes, or until the rhubarb is soft and the sugar has completely dissolved.
4. While the rhubarb mixture is cooling, juice your lemons until you have 1 cup of fresh lemon juice. Tip: Ensure your lemons are at room temperature for maximum juice yield.
