Ingredients:
- 1.74 lbs (approx. 790g) ground beef
- 1 lb Sausage optional
- 2 packs of frozen peas and carrots (approximately 600g total)
- 1 yellow onion, diced
- 5 russet potatoes (approx. 1.2 kg total)
- 1 pound of unsalted butter, divided (you will not use the entire pound)
- 1 small container of cream (approx. 200 ml)
- 1 can of tomato paste (approx. 156 ml)
- 1 carton of beef broth (approx. 900 ml)
- Salt and pepper, to taste
- Fresh herbs (such as parsley or thyme), finely chopped, optional
- Parmesan cheese for topping

Instructions:
1. Begin by preheating your oven to 400 degrees Fahrenheit (200 degrees Celsius).
2. Peel and cut the potatoes into chunks and place them into a large pot filled with water. Bring to a boil and cook until they are fork-tender, about 15-20 minutes.
3. While the potatoes are cooking, heat a skillet or frying pan over medium heat and add the ground beef, breaking it up with a spatula. Cook until browned, then drain any excess fat.
4. Add the diced onion to the skillet with the beef and sauté until the onion is translucent.
5. Stir in the frozen peas and carrots, and continue cooking for another 5 minutes until well combined and heated through.
6. Pour in the beef broth and add the tomato paste to the beef mixture. Simmer on a low heat, stirring occasionally, for 10 minutes or until the broth reduces slightly. Season with salt and pepper to taste and mix in the fresh herbs if using.
7. Once the potatoes are done, drain and return them to the pot. Add a big knob of butter (to taste) and a splash of cream. Mash until smooth and creamy. Season with salt and pepper to taste.
8. In a baking dish, pour in the beef and vegetable mixture, spreading it evenly.
9. Spoon the mashed potatoes over the beef layer and use a fork to create a textured surface on top.
10. Dot the top of the mashed potatoes with small pieces of the remaining butter.
11. Place the baking dish in the preheated oven and bake for about 25-30 minutes, or until the mashed potatoes turn a golden brown.
12. Once baked, allow the Shepherd's Pie to cool for a few minutes before serving.
