Instructions
1- Season the Shrimp:
- Begin by marinating the cleaned shrimp with a sprinkle of salt, freshly ground black pepper, and a few drops of lime juice in a stainless steel mixing bowl.
- Use your hands to mix well and set aside.
2- Prepare Your Pot:
- Heat a Le Creuset Dutch oven on an induction cooktop.
- Add a thin layer of olive oil to coat the bottom of the pot.
3- Sear the Garlic:
- Add the minced garlic to the hot oil.
- Sauté briefly until it's fragrant and golden.
4- Quick Sear the Shrimp:
- Toss the seasoned shrimp into the pot and sear them quickly for about a minute or two, just until they start to change color.
- Use a slotted spoon to remove the shrimp, leaving the garlic-infused oil in the pot.
5- Layer the Vegetables:
- Lower the heat.
- Layer the sliced vegetables in the pot starting with red bell pepper, followed by green bell pepper, onion, and tomato.
6- Return the Shrimp and Add Liquids:
- Place the shrimp back on top of the vegetable layers.
- Pour in the coconut milk and drizzle some palm oil over the top.
7- Season and Cook:
- Sprinkle chopped cilantro, additional salt, and black pepper over the ingredients.
- Cover the pot and let it cook gently over low heat for approximately 20 minutes, allowing the flavors to meld into a rich sauce.
8- Finishing Touches:
- After cooking, gently stir the stew by mixing from the sides to combine flavors without breaking the vegetables.
- Add another drizzle of palm oil for extra richness and adjust seasoning if needed.
9- Serve:
- Plate your Moqueca de Camarão Baiana hot.
- Serve with white rice and farofa for an authentic Brazilian experience.
