Ingredients
🐗 700-800g wild boar meat cut into large chunks
🥕 2 medium carrots peeled and sliced into thick rounds
🧅 10-12 pearl onions or shallots peeled and halved
🥬 1 large leek stalk green parts roughly chopped
🍷 750ml red wine
🌿 2-3 bay leaves
🌿 3-4 sprigs thyme
🫒 2-3 tablespoons olive oil
🥔 3-4 medium potatoes cubed skin on
💧 500-750ml water or stock
🌰 50g almonds peeled
🧄 3-4 garlic cloves peeled
🌿 Small bunch of fresh parsley roughly chopped
🧂 Salt to taste
⚫ Black pepper to taste
Instructions
1- Marinate the Meat:
- Place the wild boar chunks in a large stainless steel mixing bowl.
- Add the carrots, pearl onions/shallots, leeks, bay leaves, and thyme.
- Pour in enough red wine to mostly cover the ingredients. Mix well, cover, and refrigerate for 12-24 hours.
2- Prepare to Cook:
- Remove the wild boar from the marinade, reserving the marinade and vegetables.
- Heat olive oil in a stainless steel frying pan or pot on a medium-high induction cooktop.
3- Sear the Meat:
- Sear the wild boar pieces in hot oil until browned on all sides.
- Remove and set aside.
4- Sauté Vegetables:
- Add the reserved marinated vegetables and herbs to the pan.
- Sauté until slightly softened.
5- Combine Ingredients:
- Return the seared meat to the pan.
- Add the reserved marinade liquid and potatoes.
- Pour additional water or stock to mostly cover the contents.
6- Simmer:
- Bring the mixture to a boil.
- Reduce the heat, cover, and simmer for 1.5-2.5 hours until the meat is tender.
7- Prepare Picada:
- While the stew is simmering, prepare the picada.
- In a mortar and pestle, pound the almonds, garlic, and parsley into a coarse paste.
8- Finish Stew:
- Once the meat is tender, stir in the picada.
- Simmer for another 5-10 minutes to thicken the sauce.
- Adjust seasoning with salt and pepper.
9- Serve:
- Serve hot in a white, wide-rimmed bowl.
- Pair with crusty bread and a robust red wine for a full culinary experience.
