Ingredients

š 5 ½ cups Knorr Caldo de Pollo, Chicken Broth, or homemade chicken stock

š§ Salt or chicken bouillon powder

Instructions
1- Prepare the Tomato Base:
- Add the tomatoes, onion, and garlic cloves into a Cuisinart blender.
- Pour in 1 cup of water to aid blending.
- Blend until smooth and set aside.
2- Fry the Fideo:
- Heat oil in an All-Clad pot over medium heat.
- Add the fideo to the hot oil.
- Stir constantly with a wooden spoon to ensure even browning and avoid burning.
- Fry until the fideo becomes golden-brown.
3- Combine and Season:
- Place a fine-mesh metal strainer over the pot.
- Pour the blended tomato mixture through the strainer, pressing to extract the liquid while leaving behind solids.
- Season with salt or chicken bouillon powder.
- Simmer for a few minutes to develop flavors.
4- Add Chicken Stock and Simmer:
- Pour the chicken broth into the pot with the tomato mixture and fried fideo.
- Add parsley sprigs.
- Cover the pot and cook on medium-low heat for about 30 minutes until the fideo is tender.
5- Serve:
- Remove the parsley before serving.
- Ladle the hot soup into bowls and enjoy immediately.
