Ingredients
š„ 1 Litre milk (Pyrex measuring jug)
š½ 4 tablespoons cornflour
š¬ 3/4 cup sugar
šæ 1/2 teaspoon ground cardamom
š¹ 1 teaspoon rose water
š„ 1 tablespoon ground pistachios, for garnish
Instructions
1- Prepare Cornflour Mixture:
- In a small glass bowl, combine 4 tablespoons of cornflour with a small portion of the milk.
- Use a metal teaspoon to mix thoroughly until smooth and lump-free.
2- Boil Milk:
- Pour the remaining milk into a non-stick saucepan.
- Place it on a gas stove over medium heat.
- Watch closely until it begins to boil, emitting steam.
3- Dissolve Sugar:
- Gradually add 3/4 cup of sugar to the boiling milk.
- Stir continuously with a silicone spatula to ensure complete dissolution.
4- Thicken Custard:
- Reduce the heat to low.
- Gently add the cornflour mixture to the saucepan, ensuring a steady pour to prevent lumps.
- Keep stirring continuously for 10 to 15 minutes with the silicone spatula until thick and creamy.
5- Incorporate Flavors:
- Once thickened, add 1/2 teaspoon of ground cardamom and 1 teaspoon of rose water.
- Stir for a few more minutes to blend the flavors.
6- Serve:
- Turn off the heat and carefully pour the firni into a serving dish.
- Garnish with 1 tablespoon of ground pistachios for visual appeal.
- Allow the firni to cool completely before serving.
