Ingredients

🍚 2 cups of long-grain white rice
🌊 6 cups of hot water
🌿 1 cinnamon stick
🎃 1 can (15oz) of pumpkin puree
🍂 1 tbsp of pumpkin spice
🍬 1/2 cup of brown sugar
🥛 1 can of condensed milk
🥫 1 can of evaporated milk


Instructions

1- Soak the Rice:

  • In a large bowl, combine 2 cups of long-grain white rice, 1 cinnamon stick, and 6 cups of hot water. Allow the rice to soak for 24 hours, letting the flavors meld and the rice soften.

2- Blend and Strain:

  • After soaking, blend the rice mixture until smooth. For a textured horchata, strain only half of the mixture, keeping some ground rice for added body.

3- Pumpkin Mixture:

  • In a pot over low heat, combine 1 can of pumpkin puree, 1 tbsp of pumpkin spice, half of the condensed milk, and the evaporated milk. Stir frequently until the sugar dissolves completely.

4- Combine and Sweeten:

  • Mix the pumpkin mixture with the strained rice milk to combine thoroughly. Taste and adjust sweetness by adding the remaining condensed milk if desired.

5- Adjust Consistency:

  • If a thinner texture is preferred, add more water or condensed milk to reach your desired consistency.

6- Chill and Serve:

  • Transfer the horchata to an airtight container and refrigerate. Serve it cold, garnished with a sprinkle of cinnamon or nutmeg if desired.
