Lham Lahlou with Caramelized Onions and Raisins
Lham Lahlou is a classic Algerian dish often enjoyed during Ramadan. This delightful recipe is a beautiful blend of sweet and savory flavors, featuring tender lamb, caramelized onions, and juicy raisins. By grilling the onions, we add a layer of caramelized goodness, making this variation a treat for the senses.
Ingredients
š„© 1 kg lamb meat, cut into pieces

4 large white onions: 1 finely chopped, 3 thickly sliced
š§ 3-4 cloves garlic, minced
š 250-300g raisins: mixture of golden and dark, soaked in water
šæ A few sticks of cinnamon
⨠A few pods of star anise
š¶ļø 1 tablespoon ras el hanout spice blend
š§ 1 teaspoon salt
š§ 1/2 teaspoon freshly ground black pepper
š¢ļø 2-3 tablespoons cooking oil
š¬ 2-3 tablespoons sugar
š§ 500-750 ml water
Instructions
1- Prepare Ingredients:
- Wash and cut the lamb meat into pieces.
- Finely chop 1 onion.
- Mince the garlic cloves.
- Cut the remaining onions into thick rings.
- Soak the raisins for 10-15 minutes in water to plump them up.
2- Sear the Lamb:
- Place the lamb, finely chopped onion, minced garlic, salt, ras el hanout, black pepper, star anise, cinnamon sticks, and cooking oil in a Sitram pressure cooker.
- Sear the lamb over medium heat, stirring until browned and aromatic.
3- Pressure Cook the Lamb:
- Add enough water to cover the lamb, approximately 500-750 ml.
- Close the Sitram pressure cooker and cook for 15-20 minutes after reaching pressure to ensure the lamb is tender.
4- Grill the Onions:
- As the lamb cooks, heat a cast iron grill pan.
- Grill the onion rings until grill marks appear, imparting a sweet, caramel flavor.
5- Combine and Finish:
- Carefully open the pressure cooker.
- Add the grilled onions, drained raisins, and sugar to the lamb.
- Close the cooker and pressure cook for an additional 5 minutes for flavors to meld.
6- Serve:
- Open the pressure cooker, adjust seasoning and consistency.
- Serve hot, garnished richly with the grilled onions and raisins.
