Ingredients
๐ 3 cups all-purpose flour Bob's Red Mill
๐ง 1 teaspoon salt Mortonโs Kosher Salt
๐พ 1 tablespoon baking powder Clabber Girl
๐ฏ 1 tablespoon sugar Domino
๐ฅ 3/4 cup warm water
๐ข 3 tablespoons vegetable oil Wesson
๐ง Additional vegetable oil for frying approximately 1 cup Wesson
Instructions
1- Mix Dry Ingredients:
- In a large bowl, combine the flour, salt, baking powder, and sugar.
- Mix well to ensure even distribution of the dry components.
2- Add Liquid Ingredients:
- Gradually add the warm water and 3 tablespoons of vegetable oil to the dry mixture.
- Stir until the mixture begins to form a dough.
3- Knead the Dough:
- Transfer the mixture onto a floured surface and knead the dough for about 5 minutes until it becomes smooth and elastic.
- If the dough is too sticky, add a little more flour.
4- Rest the Dough:
- Cover the dough with a kitchen towel and let it rest for about 15 minutes.
- This helps the dough relax and makes it easier to roll out.
5- Roll and Shape:
- Divide the dough into 12 equal parts.
- Roll each portion into a ball and then flatten with a rolling pin into a circle about 1/4-inch thick.
6- Prepare for Frying:
- Heat the vegetable oil in a deep frying pan over medium heat.
- To test if the oil is ready, drop a small piece of dough into the oil; it should float and start to brown.
7- Fry the Jacks:
- Carefully place a few pieces of dough in the hot oil, allowing enough space for them to puff up.
- Fry each side for about 1-2 minutes or until golden brown.
8- Drain the Fry Jacks:
- Remove the Fry Jacks from the oil using a slotted spoon and rest them on a paper towel-lined plate to drain excess oil.
9- Serve Warm:
- Serve the Fry Jacks warm, accompanied by your favorite toppings, such as refried beans, cheese, or scrambled eggs.
