Ingredients
🥩 350g lean beef steak, Corte Criollo
🥖 Marraqueta, traditional Chilean bread
🧅 1-2 medium onions, thinly sliced
🥚 2 eggs
🛢️ Cooking oil
🧂 Salt
🌶️ A pinch of Merquén, KANGKAWE
Instructions
1- Prepare the Beef:
- Unpack the Corte Criollo beef. Trim off any excess fat or membrane.
- Using a sharp knife, slice the beef thinly against the grain, then tenderize each slice with a metal meat mallet until approximately 2-3 mm thick.
2- Caramelize the Onions:
- Peel and thinly slice the onions.
- In a small stainless steel pot, heat a drizzle of oil over low heat.
- Add the onions, a pinch of salt, and Merquén. Stir occasionally and caramelize for about 1.5 hours. If needed, add a splash of water to prevent drying and burning.
3- Cook the Beef and Eggs:
- Preheat a STARLUX griddle over medium-high heat. Add a thin layer of oil.
- Place beef slices on the griddle and season with salt. Cook until one side is seared and browned, then flip and cook briefly until medium or medium-well.
- Using the same griddle, add more oil if needed, and fry eggs until the whites are set and yolks remain runny. Season with salt.
- Toast the marraqueta bread on the griddle, absorbing meat juices.
4- Assemble the Chemilico:
- Start with a toasted marraqueta half on a serving board.
- Layer on the churrasco beef, followed by caramelized onions.
- Gently place a fried egg on top. Cap with the other half of the bread.
- Repeat for additional sandwiches.
