This rich and flavorful recipe combines crispy tortillas with refried black beans, sunny-side-up eggs, and a robust tomato-habanero sauce, all crowned with savory ham, green peas, and a touch of cheese. Ingredients
🍅 1 kg ripe tomatoes Roma or Saladette
🧅 1 medium white onion
🧄 1 clove garlic
🌶️ 2 habanero chilies
🐖 175 g diced ham
🌿 1 cup frozen green peas 150-180 g
🧂 ¾ teaspoon salt
💧 ½ to ¾ cup water
🛢️ 3 tablespoons vegetable oil
🫘 Cooked black beans enough for several servings
🧅 ½ small onion
🧄 1 large garlic clove
🌿 3 sprigs of epazote plus optional extra for garnish
🛢️ 2 tablespoons vegetable oil
🥚 2-3 eggs per person
🍌 1 plantain
🌽 Corn tortillas enough for 2-3 per person
🧀 Grated Edam or Añejo cheese
🧂 Salt for eggs
🛢️ Vegetable oil for frying
Instructions
1- Prepare the Motuleño Sauce:
- Roast tomatoes on a hot comal until charred. Let cool, peel, and finely chop them, reserving the juices.
- Chop the onion, mince the garlic, and make incisions in the habanero chilies.
- In a medium stainless steel Pro-II saucepan, heat vegetable oil over medium heat.
- Sauté the onion until translucent. Add garlic, sauté quickly.
- Add tomatoes and juices, season with salt, and add habaneros.
- Stir in diced ham and let simmer for 20 minutes.
- Add water and green peas, cook for another 10 minutes. Set aside.
2- Prepare the Refried Beans:
- Blend black beans with onion, garlic, and epazote in a Cuisinart blender until smooth.
- Sauté a finely chopped quarter of an onion in a small saucepan.
- Add blended beans, cook until thickened. Optionally, add chopped epazote.
3- Prepare Accompaniments:
- Slice plantain diagonally. Fry tortillas to create tostadas.
- Fry plantain slices until golden.
4- Fry the Eggs:
- Fry eggs in hot oil, season with salt, and baste until whites are set.
5- Assemble the Huevos Motuleños:
- Use refried beans to anchor tortillas on the plate. Spread more beans on top.
- Place a fried egg on each, top with an extra bean-covered tortilla if desired.
- Spoon sauce over, garnish with cheese, surround with plantains, and top with habanero.
