Ingredients
For the Turkey:
๐ฆ 1 whole turkey approximately 12-15 lbs/5.4-6.8 kg
๐ฅ 1 cup mayonnaise
๐ฟ 2 tablespoons dried parsley Brand: Parsley Flakes by Member's Mark or McCormick
๐ง 2 tablespoons powdered garlic Brand: Member's Mark Granulated Garlic
๐ง 2 tablespoons chicken seasoning Brand: Knorr Caldo con Sabor de Pollo/Chicken Flavor Bouillon
๐ท 1 cup red wine Brand: Riunite Lambrusco
For the Roasting Pan (Vegetables):
๐ฅ Small amount of avocado oil Brand: Olivari Avocado Oil
๐ฅ Approximately 12-15 small potatoes red skin potatoes
๐ฅ Approximately 8 carrots cut into large pieces
๐ฑ Approximately 2 pounds Brussels sprouts
๐ Approximately 3-4 sweet potatoes diced

1 medium white onion quartered
For the Achiote Marinade (Blended):
๐ 1 1/2 cups orange juice
๐ Juice of 2 large lemons
๐ถ๏ธ 7 ounces achiote paste Brand: El Mexicano Achiote Rojo
๐ง 2 tablespoons powdered garlic
๐ง 2 tablespoons chicken seasoning

Instructions
1- Prepare the Roasting Pan:
- Coat the bottom of a large roasting pan with avocado oil.
- Remove the roasting rack from the pan.
2- Add Vegetables to Pan:
- Arrange small potatoes, carrots, Brussels sprouts, and sweet potatoes in the oiled roasting pan.
3- Position Turkey:
- Place the roasting rack back into the pan over the vegetables.
- Place the turkey on the rack.
4- Prepare Mayonnaise Mixture:
- In a bowl, mix 1 cup mayonnaise, 2 tablespoons dried parsley, 2 tablespoons powdered garlic, and 2 tablespoons chicken seasoning until well combined.
5- Apply Mayonnaise Mixture:
- Wear disposable gloves to carefully separate the turkey skin.
- Spread the mayonnaise mixture under the skin and coat the outside as well.
6- Inject Wine:
- Using a meat injector, inject 1 cup of red wine into the turkey meat.
7- Refrigerate and Prepare Achiote Marinade:
- Refrigerate the turkey for 25 minutes.
- While resting, blend together 1.5 cups orange juice, juice of 2 lemons, 7 ounces achiote paste, 2 tablespoons powdered garlic, and 2 tablespoons chicken seasoning until smooth.
8- Apply Achiote Marinade:
- Remove the turkey from the fridge and coat it with the achiote marinade.
9- Marinate and Stuff:
- Marinate for 15 minutes.
- Optionally, stuff the turkey with pre-made stuffing.
10- Roast the Turkey:
- Preheat the oven to 400ยฐC (750ยฐF) and place the pan inside.
- After 15 minutes, reduce to 300ยฐC (575ยฐF) and roast for 3-4 hours.
11- Serve:
- Carve the turkey, serve with roasted vegetables, and optionally serve with mashed potatoes, gravy, and dinner rolls.
