Instructions
1- Preparation:
- Clean the Angus beef pieces using lemon juice and vinegar to remove impurities and add flavor.
2- Seasoning:
- In a metal mixing bowl, combine the beef with salt, black pepper, oregano, Worcestershire sauce, and sofrito.
- Mix thoroughly using tongs until evenly coated.
3- Searing:
- In a stainless steel pan (from a Rachel Ray cookware set), heat avocado oil over medium-high heat.
- Add the seasoned beef in batches to avoid overcrowding.
- Allow each side to sear for 5 minutes until browned.
4- First Braise:
- Pour any leftover seasoning mixture from the bowl into the pan.
- Add ½ cup of water and tomato sauce, stirring to combine.
- Cover with a glass lid and reduce heat to medium, letting it braise for 40 minutes.
5- Moistening:
- After 20 minutes, uncover and add 1 cup of water.
- Stir, then re-cover and continue braising for the remaining 20 minutes.
6- Fat Removal:
- Once braising is complete, remove the lid.
- Using a spoon, skim off any excess fat from the surface.
7- Vegetable Addition:
- Add sliced red onion, red and green bell peppers.
- Stir to integrate the vegetables with the sauce and beef.
8- Final Simmer:
- Cover the pan again, cooking for an additional 10 minutes over medium heat to soften the vegetables.
9- Serving:
- Serve hot with white rice, stewed beans, a fresh green salad, avocado, or tostones.
