Ingredients

🌿 A small bunch of fresh parsley for sauce and garnish

🌱 A small bunch of fresh thyme
🌶️ 2 Jamaican hot peppers 1 red and 1 green, Scotch Bonnet or similar
🧈 3 tablespoons of butter
🧄 2-3 tablespoons Haitian Epis homemade with blended garlic, parsley, green onions, and chili flakes
🌬️ About 1 teaspoon of whole cloves
🧂 A dash of garlic seasoning salt
🍃 A dash of Italian herbs
💧 About 1 cup of water variable with fish size
🍠 Yucca for serving, optional
Instructions
1- Prepare the Fish:
- Ensure the red snapper is marinated in salt and lime juice for at least 30 minutes. Rinse under cold water.
2- Score the Fish:
- Make several incisions across its body to allow seasonings to penetrate.
3- Season the Fish:
- Squeeze fresh lime juice over the fish. Use a basting brush to apply the Haitian Epis generously, ensuring it reaches the cuts and coats the fish thoroughly. Set aside.
4- Prepare the Sauce Base:
- Heat a T-Fal skillet until hot. Melt 3 tablespoons of butter in it.
5- Sauté Aromatics and Spices:
- Add sliced green and red bell peppers, onions, cloves, and a dash of thyme, garlic seasoning salt, and Italian herbs. Sauté until they start to release their aroma.
6- Add Fish to Skillet:
- Place the seasoned snapper on the sautéed vegetables and spices.
7- Add Fresh Herbs and Peppers:
- Distribute fresh parsley and thyme sprigs around and over the fish. Add the whole Jamaican hot peppers to the skillet for flavor.
8- Add Liquid:
- Pour about 1 cup of water into the skillet.
9- Cook the Fish:

10- Flip and Continue Cooking:
- Carefully flip the fish using tongs, cover again, and continue cooking for an additional 3-4 minutes.
11- Check for Doneness:
- The fish should be opaque and flake easily. Taste the sauce and adjust seasoning if necessary. The total cooking takes about 8-10 minutes.
