Instructions:
1. Preheat your oven to 200°C (400°F).
2. Place the peeled and chopped potatoes into a pan with cold water and bring to the boil. Cook for 15 minutes, then drain using a colander.
3. Pass potatoes through a potato ricer or mash them until smooth. To the mash, add butter and double cream. Season with salt and pepper, stir together and set aside.
4. In a large saucepan, pour the milk and add the salmon and cod fillets. Bring to a boil and simmer for approximately 3 minutes. If using raw prawns, add them in the last minute of cooking.
5. Transfer the fish to a baking dish, remove the skin, and gently flake apart the fish. Layer raw (now poached) or cooked prawns if using. Pour the cooking liquid from the fish into a jug and save for the cheese sauce.
6. For the sauce, use the same pan (after a quick wash and drying), melt butter over medium heat, then mix in plain flour and cook for a minute.
7. Gradually add the reserved milk, stirring constantly until the sauce thickens (avoid whisking to prevent frothing). Add three-quarters of the grated cheese, stir until melted, and remove from heat.
8. Pour the cheese sauce over the fish in the baking dish, then carefully spread the prepared mashed potato on top.
9. Ruffle the mashed potato with a fork for a textured top and sprinkle additional grated cheese over it.
10. Bake in the preheated oven for 15 to 20 minutes or until the cheese is melted and golden brown.
