Ingredients
🐓 1 whole chicken, cut into pieces, washed with fresh lemon and salt
🌶️ 1/2 teaspoon Badia Black Pepper
🌿 1/2 teaspoon Spice Supreme Ground Oregano
🧂 1 tablespoon Badia Adobo with Cumin Seasoning
🍶 Few dashes Maggi Jugo Seasoning Sauce
🌾 Several squirts Baldom Sazón Líquido Ranchero Original
🌶️ 1/4 teaspoon Supreme Tradition Ground Paprika
🧄 1 tablespoon garlic paste or 3 mashed garlic cloves
🌿 2 tablespoons homemade seasoning, sofrito-like base
🍊 Juice of 1 whole sour orange or a few splashes of Badia Mojo Marinade
💧 1 packet Goya Cubitos en Polvo Caldo de Pollo, Chicken Bouillon Powder
🍷 Few splashes Goya Cooking Wine Red Wine
🌶️ 1 large green pepper, sliced
🌶️ 1/2 red pepper, sliced
🌶️ 1/2 orange/yellow pepper, sliced
🌿 2 sprigs cilantro, chopped
🧅 1/2 red onion, sliced into rings
🧄 2 stalks scallions or green onions, chopped
🛢️ Small amount Heart Healthy Vegetable Oil
🍅 1 small can Goya Tomato Sauce
💦 1 cup water
🫒 1 tablespoon green olives, optional
Instructions
1- Preparation Time:
- Wash and chop chicken with lemon and salt in 15 minutes.
2- Marinate Chicken:
- In a mixing bowl, coat chicken pieces with black pepper, oregano, adobo seasoning, Maggi sauce, Baldom Sazón, paprika, garlic, homemade seasoning, and sour orange juice.
- Mix in chicken bouillon powder and cooking wine.
3- Add Vegetables to Marinade:
- Incorporate half of the peppers, cilantro, red onion, and scallions.
- Allow chicken to marinate for 15 minutes in the refrigerator if desired.
4- Initial Sauté:
- Heat vegetable oil in a large pot over medium heat.
- Add chicken pieces gradually to maintain oil temperature and avoid water release.
5- Brown Chicken:
- Cook, turning every 5 minutes to evenly brown, for about 20-30 minutes or until the water evaporates, obtaining a rich color.
6- Add Sauce and Vegetables:
- Stir in Goya tomato sauce and the rest of the peppers, onions, and seasoning liquid.
7- Simmer:
- Add water, cover with a lid, and stew on medium heat for 30 minutes to 1 hour until the chicken is tender.
8- Final Touches (Optional):
- Stir in green olives for an added flavor kick.
