Ingredients
🥫 2 cans white beans 400ml / 13.5oz each, drained
🧅 2 onions, chopped
🌶️ 2 red bell peppers, chopped
🫒 4 tbsp olive oil
🍅 2 tbsp passata or tomato paste
🥣 1.25 L 2.5 pints beef stock
🌿 1-2 tsp oregano fresh or dried
🌶️ 1 tsp paprika
🧂 1 tsp Salt
🧂 1 tsp Pepper
Instructions
1- Prepare the Base:
- Set the Ninja Foodi on sauté mode.
- Add 4 tablespoons of olive oil to the inner pot.
2- Sauté Ingredients:
- Add the chopped onions and sauté until translucent.
- Toss in the chopped red bell peppers and cook until softened.
3- Incorporate Tomato:
- Stir in the passata or tomato paste.
- Mix in the drained white beans.
4- Add Liquids and Pressure Cook:
- Pour in the beef stock, ensuring the liquid meets the desired volume.
- Secure the lid, ensuring the valve is set to "seal."
5- Pressure Cook the Soup:
- Select the "Pressure" setting and set for 30 minutes.
- Once done, let the pressure release naturally.
6- Season and Blend:
- Open the lid and mix in paprika, oregano, salt, and pepper.
